Lubbock's Latest Restaurant Health Inspections Apr. 19-25

 

LUBBOCK, TX — A hibachi and sushi restaurant received another low health inspection score last week after earning even lower scores in the past. However, the Hub City only saw 2 adequate performers and 7 top performers.

Top performers have scores considered 90 and above, while adequate performers score between 80 and 89. Low performers have scores of 79 and below.

Below is the list of performers for the week of April 19 through April 25:

Low Performers:

Hibachi Express at 4409 114th Street
Score: 71
Violations: 27

  • Three pans of wontons in walk in freezer contaminated with ice condensate from walk in freezer.
  • Raw chicken stored above raw shrimp in walk in cooler. No cross contamination was observed.
  • Raw shrimp stored above raw ready-to-eat celery and tomatoes in walk in cooler. No cross contamination was observed.
  • Raw whole muscle beef stored above raw shrimp in walk in cooler. No cross contamination was observed.
  • Raw shell eggs stored above raw ready-to-eat vegetables in walk in cooler. No cross contamination was observed.
  • Raw chicken stored above raw whole muscle beef in walk in cooler. No cross contamination was observed.
  • Accumulation of brown residue on food-contact surface of soda nozzle for a clear liquid.
  • Employee not performing a hand wash after eating personal food before preparing RTE sushi roll.
  • Employee not performing a hand wash after taking a prescription medicine and drink before engaging in food preparation.
  • A bottle of prescription medicine stored on shelf above prep table.
  • Hand wash station on cook line blocked with a bucket and container of cut ready-to-eat vegetables.
  • A stainless steel scrubber stored in hand wash sink by ware wash.
  • Employee eating grapes at sushi station.
  • Employee drinking for an unlidded drink and taking a prescription medicine at back prep table.
  • A wet in-use cloth not in immediate use stored on prep surface of sushi station.
  • Three containers of ginger stored on floor of sushi station.
  • An in-use scoop used in the bulk salt container stored with handle in contact with the salt in dry storage area.
  • Wares on shelf above 3-compartment sink in ware wash are wet stacked.
  • Employee personal drinks stored on prep table by cook line.
  • Employee personal grapes stored on prep area of sushi station.
  • Employee personal coat and drinks stored above bulk rice and single-use forks.
  • Wet mop not in immediate use stored in mop bucket at mop sink in a position that does not allow air drying.
  • Employee personal drinks and prescription medication stored on shelf above back prep area.
  • Records for using time without temperature as a control not maintained. This is a repeat violation. Repeat violation fee applied.
  • Due to the number and nature of violations active managerial control was not demonstrated.
  • Accumulation of ice build up in walk in freezer. Wontons are contaminated by this ice build up.
  • Vent hood filter baffles have an accumulation of grease build up on them.

 

Adequate Performers:

Reece Golf Center at 1406 Quitsna Avenue
Score: 84
Violations: 10

  • Unopened package of sliced ham and a container of sliced ham and turkey stored in a reach-in cooler, next to the ice machine, were measured at a temperature above 41°F. Temperature of the sliced turkey and ham in the container measured 51°F. Ambient air thermometer reading was 50°F. PIC stated that the unopened package of ham was placed in the cooler the previous day, whereas, the container of ham and turkey were placed less than an hour prior.
  • Two chafing candles were stored on top of the reach-in cooler, located next to ice machine.
  • PIC was unable to provide test strips for the chlorine solution that is used as a sanitizer.
  • Sliced lime was in the basin of the hand sink.
  • Two ice scoops were stored on top of a dusty surface of the ice machine.
  • Vent for air conditioner, directly above ice machine, has a heavy accumulation of dust.
  • Mop, not in current use, was stored in dirty mop water of mop bucket next to ice machine.
  • Reach-in cooler, located next to ice machine, was unable to maintain a temperature of 41°F or below as evidenced by the ambient temperature measurement of 50°F and food temperature taken of the sliced turkey and ham at 51°F.
  • Ice bin, at bar counter, does not have a cover to protect against environmental contamination.
  • Vent hood filters are heavily coated in grease.

Antojitos Hondurenos Y Mexicanos at 2002 34th Street
Score: 89
Violations: 4

  • Raw shell eggs held at 72F on prep table.
  • Employee contact RTE flour tortillas with bare hands. Facility does not have bare hand contact policy.
  • First aid kit mounted to wall with RTE fruits and vegetables stored below.
  • Cell phone stored in hand sink.
