LUBBOCK, TX — This week’s health inspections showed mixed results across the Hub City, with one local Mexican restaurant receiving a low score, five earning average marks, and 14 others standing out with high scores.
Top performers have scores considered 90 and above, while adequate performers score between 80 and 89. Low performers have scores of 79 and below.
Below is the list of performers for the week of May 3 through May 9:
Low Performers:
Mar Y Tierra #1 at 2531 82nd Street

Violations: 24
- Container of horchata had a prepare date of 4/28/2025 located in walk-in cooler.
- Raw whole beef stored above covered container of ready-to-eat asado located in walk-in cooler.
- Packaged bottled water stored directly on packaged whole raw beef located in walk-in cooler.
- Can opener blade, not in immediate use, soiled with food residue.
- Employee cleaned hands for less than 20 seconds at hand washing sink located next to fryer.
- Employee washed gloved hands in hand washing sink, then discarded gloves and donned new gloves without a proper hand wash.
- Container of first aid medications stored above single-use storage bags located on dry storage rack next to reach-in freezer.
- Chemical spray bottle with an orange solution, located on service table, did not bear a label to identify its contents. PIC stated it is an all-purpose cleaner.
- Employee used bare hand to turn off hand washing sink after washing hands.
- Cardboard used as a liner to store containers of milk located in walk-in cooler.
- Bucket of chlorine sanitizer stored directly on floor located in cooking area.
- Container of beef stomach, located in walk-in cooler, not covered.
- Bowl, without a handle, stored inside bin of uncooked rice located next to prep table.
- Plastic containers, located next to reach-in freezer, stacked wet.
- Single-use container, without a handle, stored in container of sugar located under microwaves.
- Metal containers, located above prep table, stacked wet.
- Single-use butter containers being re-used to store food.
- Single-use plastic storage bags that have been washed to be re-used, stored on storage rack above two-compartment sink.
- Single-use cup used to dispense sugar stored inside bin of sugar.
- Accumulation of dust on intake vent located above reach-in freezer.
- Accumulation of condensate coming from condenser located in walk-in freezer.
- Accumulation of food residue on interior surface of walk-in freezer door.
- Two lidded personal drinks stored on prep table.
- Due to the nature and number of violations, managerial control was not observed.

- Raw beef held at 60F on prep table. PIC stated beef had been out of WIC < 30 minutes.
- RTE hamburger patties held at 118F on stove top. PIC stated hamburgers had been prepared < 30 minutes prior.
- RTE cooked, sliced onions held at 85F on prep table. PIC stated onions had been prepared < 30 minutes prior.
- RTE, prepared on site, pico de gallo held 7 days beyond use or discard date of 4.29.2025.
- Raw shell eggs stored above raw, sliced onions in WIC.
- Heavily rim/seam dented canned food stored with in use, intact canned foods.
- Knives with missing tips stored with intact, in use knives, not maintained in good repair.
- Clean utensils stored wet, not in a self draining position that allows air drying.
- Employee drink stored on shelf above RTE food.
- Employee personal drink and cell phone stored on prep table.

- Multiple tubs of raw animal foods were stored out of cold holding to be cooked or prepared in excess of what could be reasonable used in a timely manner.
- Raw shell eggs stored above raw marinated beef in walk-in cooler.
- Employee personal animal foods were stored above ready to eat foods for-service.
- Hand sink had 3 utensils stored in the sink basin.
- Hand sink was blocked by equipment.
- Multiple wet cloths were stored on counters between uses.
- Various sauces in 5 gallon containers were stored on the ground throughout the kitchen.
- Dishes stored at the front cook line for serving were still wet from the ware wash process.
- Spoon used for rice stored in water that measured 74°F.
- Clean wares were stored below dirty wares which were being stored in preparation to be washed. The clean wares were not protected from contamination by the dirty dishes. No contamination observed.
- Scoop used for bulk container of flour was laying with its handle in the product.
- Food storage tub holding noodles was melted and not in good repair.
- Ice deflector plate had accumulation of debris and black residue. Ice scoop storage slot had flaking material and was not clean.
- Employee personal jacket stored against dry food storage packages on shelf. Employee personal food stored above soy sauce containers in walk-in.
- PIC was unable to supply food handler certificates for any employees.
Dusty Coast Sodas at 7924 Slide Road

- Spray bottle with solution of chlorine sanitizer has a concentration above 200ppm chlorine stored by 3-compartment sink.
- Spray bottle with manufacture label for quaternary ammonia sanitizer also had hand written "bleach" on the bottle stored by 3-compartment sink.
- No sanitizing solution testing devices for in use chlorine sanitizer.
- Hand wash sink used for dumping drinks and ice.
- Wet in-use cloths for wiping stored on prep table between uses.
- A box of RTE bagged popcorn stored on floor in front storage area.
- 7 boxes of single-service cups stored on floor in front storage area.
- Wet mop not in immediate used stored in mop sink in a position that does not allow air drying.
- Employee personal drink, keys, and phones stored on prep table.
Saltgrass Steakhouse at 6026 Marsha Sharp Freeway West

- Mechanical dishwasher tested at 0ppm of chlorine using inspector testing strips.
- Two ice scoops, in current use, at the ice bin by the soda dispenser had sticker residue on the food contact surface from original purchase.
- 3 condiment bottles with white chocolate sauce in the reach in cooler near the ice cream and salad prep areas were dated as use by 5/1 on 5/5. One shelf of the walk in cooler used for dressings and garnishes such as relish, mustard, chipotle mayo, and ranch dressing all had date marks that were past the use by date. Use by dates ranged from 4/28 to 5/1.
- No chlorine sanitizer test strips available in facility at time of inspection.
- No paper towels were available at the hand sink closest to the ovens and flat top grill at the time of inspection.
- Whisk at clean wares rack had a missing end cap and visible residue inside the handle.
- Frozen heat sealed bags of gravy prepared on site were thawing in a prep sink in stagnant water.
- Ice cream scoop stored in an empty dipper well that was not turned on. Ice cream scoop was visibly soiled with ice cream.
- Scoop used for butter at prep table for baked potatoes was stored in water at 109°F.
- Two ice buckets were stored on top of the ice machine and were not inverted or covered to prevent possible overhead contamination and pooling of water in the buckets.
- Facility has two drying racks available for air drying clean utensils and wares. Plastic and metal food containers were stored stacked inside one another wet in a manner that does not allow for proper air drying of the utensils.

- Clean ladles stored for use on rack in back prep area with food residue on food-contact surface of ladles.
- Mechanical ware wash dispensing a chlorine sanitizer solution at 0ppm chlorine.

- Seven heavily rim dented cans of tomatoes and one heavily rim dented can of black beans stored with in use canned foods in dry storage area.
- Commercially prepared RTE/TCS hot dogs stored in reach in cooler on prep line opened on 5/5 without date marking.
- No hand washing cleanser available at front hand wash sink.
- Two single-use containers used as scoops stored in container of seasoning in dry storage.
- Employee personal coat stored on box of single-use cups.
